Preparing the squid from scratch isonly half the battle, and only those who remain calm willstand any chance of delivering a perfectly cooked seafood treatthat delivers a true taste sensation.The last two chefs aretasked by Marcus to make a sweetbread and caramelised oniontart served with a meat stock vinaigrette. There can be noexcuses as, with the pastry case already provided, Marcuswill expect every element to be bang on the money.
